FROZEN CUCUMBER MARGARITA

Looking for an ice cool alternative to grabbing a beer from the fridge this Summer? This frozen variation of the classic margarita recipe offers a refreshing take on the cocktail, and is surprisingly simple to make. Perfect for barbecues or late afternoons lounging in the last of the sun, the frozen cucumber margarita has the look of a drink you'd pay a premium for in a city bar. So why not save your pennies and make it yourself! And FYI, for those of you looking to throw a Mexican-themed night (See our 'Partido de Benito Juarez' feature in 'ACTIVITIES'), this drink provides a nice little palette-cleanser to offset the fiery salsa flavours. 

INGREDIENTS (Serves 2 Cocktails):

 

- 2 Full cups of ice blocks

 

- 150ml Tequila

 

- 30ml Triple Sec

 

- Juice from 1 Lime

 

- 1 Small bunch of fresh mint leaves

 

½ Burpless cucumber

 

 

Instructions: 

 

1. If you own a blender: simply combine all the ingredients, and blend until the mixture is light and frothy.

 

If you do not own a blender:

 

1. Cut the cucumber half into thin slices. Put aside two of the thin slices. 

 

2. Cover the cucumber and ice with a tea towel, and crush using a rolling pin.  

 

3. Next, split the mint leaves into two portions and press into the bottom of your two glasses. 

 

4. Pour the crushed ice and cucumber mix into the two glasses over the top of the fresh mint. 

 

5. Add 150ml of tequila, 30ml of triple sec and the lime juice to a measuring jug, and stir well. 

 

6. Pour half the liquid from the measuring jug into each glass. 

 

7. Cover each glass with a cocktail shaker,or similarly appropriate cover, and shake well. 

 

8. Serve with one slice of cucumber over the edge of each glass.
