THE MULLED HALLAMSHIRE

...Because sometimes on those cold, dark Winter nights when you're missing home, a mug of hot chocolate just won't cut it. This cosy alcoholic beverage will warm the body and sooth the soul when you're feeling at your most fragile. Aptly titled because Hallam folk tend to be warm, rich, and, not to mention, fruity characters, this hot mulled cider variation is the perfect hug in a mug. Easy to concoct, and satisfying from first sip to last, 'The Mulled Hallamshire' deserves to be a Winter staple in your student house.

Ingredients (Serves 8):

- 1 Bramley apple

- 1 Small handful of cloves

- 1 Medium orange

- 2 Litres of Dry apple cider

- 110g of Demerara sugar

- 1 tsp of Allspice

- 1 Pinch of grated nutmeg

- 240ml of Dark spiced rum

- 2 tsp of Cinammon

Instructions:

1. Cut the orange into thin slices and set aside

2. Chop the apple in half, and stud the flesh with the cloves.

3. Combine all ingredients except rum in a medium pan, and simmer under low heat for 8-10 minutes.

4. Remove pan from the hob, and discard the two pieces of apple.

5. Pour in the rum and mix thoroughly.

6. Using ladle, serve portions into mugs while hot.

"In my view, Winter is all about movies, open fires, and hot drinks, and this would certainly be my bevvy of choice for any duvet day on the sofa. Just make sure you don't have too many glasses, or you'll be snoozing before you reach the end of the Home Alone!"
