Halloumi and Sausage Meat Wrap

Halloumi has become something of a cult favourite amongst bold foodies who want something a little more exotic to sling on the Summer BBQ . This Cyprian wonder-cheese, made from a combination of sheep and goat's milk, is distinguished by its high melting point, making it ideal for frying and grilling. As for the sausage meat, I think we all know what we're getting with that! Sling some veg into the mix to keep your health-conscience clean, bung it all in a wrap, and you're onto an easy winner. Boom! 

 

Ingredients (Serves 1):

 

- 1 Wholegrain wrap

 

- 40g Mixed Salad Leaves

 

- 1/2 Sweet potato 

 

- 2 Regular sausages

 

- 50g Halloumi cheese 

 

- Chilli Sauce (optional)

 

- Reduced fat mayonnaise (optional) 

 

 

            Cooking Instructions:

 

1.   Slice sweet potato length-ways and pierce surface of flesh several times. Place sweet potato on baking tray and leave in oven on middle shelf for 30 minutes on 180F.

 

2.   Gently mash the sweet potato until the flesh is loosened, and the surface is soft and fluffy. Return to the bottom shelf of oven and reduce to 100F.

 

3. Slice two sausages length-ways and fry on medium heat, turning until cooked through. Once cooked, remove and set aside.

 

4.  Cut off two thick slices of halloumi and place in frying pan on medium heat, turning regularly until surfaced is browned. 

 

5. Remove sweet potato from oven, scoop out flesh and mash thoroughly. 

 

6. Place wholemeal wrap on plate and scatter mixed salad garnish. 

 

7. Add mashed sweet potato to centre of wrap.

 

8. Add sausage meat on top of the sweet potato.

 

9. Add flavour using sweet chilli sauce and       mayonnaise (optional).

 

10. Fold over edges of wrap so contents are sealed.
