Mango and Mixed Nut Curry

Infusing sweet, sweet coconut milk with pecan and cashew nuts, fresh chilli peppers and mixed spices, the hot and fruity aromas produced by this vegan curry while cooking would have even the sternist carnivore licking his lips. But far from being merely a means to convert meateaters to more animal-friendly cuisine, you can also be sure this dish will impress that vegetarian, bohemian friend of yours. Imagine their surprise when they rock up at your place, once again expecting to be 'treated' to another round of Quorn sausages and chips, only to find this culinary delight in front of them. You may find they a little more frequently afterwards, as well...    

Ingredients:

 

- 2 Ripe Champagne mangoes

 

- 200ml tinned Coconut milk

 

- 1 Dried Red chilli

 

- 1 tsp Mustard seed

 

- ½ tsp hot chilli powder

 

- ½ tsp turmeric

 

- 25g Pecan nuts

 

- 25g Cashew nuts

 

- 1 Segment of lime

 

- 1 Sprig of curry leaves

 

- 1 tbsp Olive Oil

 

- 1 tsp White sugar

 

Cooking Instructions:

 

1. Peel and de-stone mangoes, before setting aside.

 

2. Cut 1 mango into four pieces put in blender with ½  of pecan and cashew nuts, the whole dried chilli, and ½ tsp mustard seed. Blend until liquid is smooth.   

3. Heat olive oil and fry remaining mustard seeds on medium heat for 2-3 minutes

 

4. Add turmeric and chilli powder to pan, along with sprigs of curry leaves. Heat for 5 minutes, stirring occasionally.  

 

5. Chop remaining mango into bite-sized pieces. Add to pan, along with liquid from blender, and remaining nuts. Heat for further 6-8 minutes, turning and stirring regularly.

 

6. Squeeze on lime and add sugar. Add water if liquid is too thick.

 

7. Serve on bed of white rice.
